New Mexico State University’s College of Agricultural, Consumer and Environmental Sciences will host an online course in Spanish designed for managers and supervisors of canned food processing operations around the region.

The course, “Curso de Mejor Control de Procesos Térmicos-Better Process Control School for low acid and acidified foods,” will be presented online over eight sessions from 8 a.m. to 12:30 p.m. Nov. 10 through Dec. 8. The certification course is for managers and supervisors of food processing operations of thermal procession systems, acidification and container closure evaluation programs for low-acid and acidified canned foods. The school satisfies the training requirements specified in both FDA and USDA regulations.

A Better Process Control School has been approved by the commissioner of the Food and Drug Administration and sponsored by NMSU and Centro de Investigación en Alimentación y Desarrollo-Culiacán. The FDA requires this course for food processors that process acidified and low-acid foods.

Two course options are offered: one for acidified foods (six sessions) costs $500 per person with a 10 percent discount for early registration or for groups of five or more. The course for low acid foods (eight sessions) costs $600 per person with a 10 percent discount for early registration or for groups of five or more people.

Registration cost includes printed textbook, online instruction and testing. Registration deadline for either course is Oct. 27, with early registration closing Oct. 20.

Course instructors are Spanish speakers with vast experience and knowledge of food regulations, processing and safety, and are recognized processing authorities who educate and assist food entrepreneurs and food companies as part of NMSU’s land-grant mission.
